Asian Noodle Salad with Chilies

Time: 15 minutes plus 4 hours (see below)    Yield:  6-8 servings

1 lb. dried soba noodles
1/4 sesame oil
1/4 cup soy sauce
1 Tbs. sugar
1 1/2 Tbs. balsamic vinegar
1 tsp. salt
1 cup chopped cilantro
8 scallions, thinly sliced
2 red or green hot peppers, seeded, veins removed and minced (about 1 1/2 Tbs.)
Toasted sesame seeds, garnish

Cook noodles in rapidly boiling water until tender.  Drain immediately and run cold water over noodles until cool. Drain well.  Transfer to bowl.

Combine sesame oil, soy, sugar, vinegar and salt in small bowl and stir to dissolve sugar.  Toss with noodles.  Add cilantro, onions and chilies and mix well. Sprinkle with sesame seeds.

Best if made 4 hours before serving,  Cover and rest at room temperature.  Serve at room temperature.
