Cooking Tips for Dandelion Greens

Tip: Green Dandelion has a fairly bitter taste if not fresh, so eat it as soon as you can.

Extra virgin olive oil
Lemon juice
Salt & pepper
Garlic (optional)
Crushed pepperoncino (optional)

Wash the dandelion well, leaving the stems on except for the bottom ¼-inch. Cut and place in boiling water. Cook the dandelion greens for about 10-15 minutes. Squeeze all the water out, and set aside to cool down. Toss with extra virgin oil. Add lemon juice, salt and pepper. 

Optional: add garlic and crushed pepperoncino.
