Raw Beet Salad with Goat Cheese and Apple

  •     4 beets, peeled and cut into matchsticks
  •     2 apples, peeled, cored, and cut into matchsticks
  •     7 oz goat cheese
  •     3 tbs lemon juice
  •     3 tbs white balsamic vinegar
  •     5 tbs olive oil
  •     salt and pepper, to taste
  •     small bunch of fresh mint

In a small bowl, mix lemon juice, vinegar, oil, salt, and pepper to make the dressing.
In a large bowl, pour the dressing over the beet and apple matchsticks
Individually plate the salad. Crumble goat cheese on top and sprinkle with mint leaves.
