Roasted Pear Salad Time: 30 minutes Yield: 4 servings 2 pears, cut in half and cored 1/3 cup plus 1 Tbs. olive oil 1/2 small shallot, minced 3 Tbs. balsamic vinegar 1 tsp. mustard Salt & pepper 6 cups salad greens 2-3 oz. blue cheese, crumbled toasted walnuts (optional) Preheat oven to 400 degrees. Toss pear halves with 1 Tbs. oil, salt and pepper to taste, and place cut side down on baking dish. Roast for about 20 minutes until soft but not too mushy. Let cool. Mix the mustard and vinegar and shallots. Add salt & pepper to taste. Drizzle olive oil into this while whisking to make a nice emulsified vinaigrette. Assemble the salad: slice the pears and toss with greens and dressing. Sprinkle blue cheese (and walnuts if using) over all and toss again. |
