Squash Gratin
Time: 10 minutes prep; 30 minutes cook
Yield: 6 servings
2 Tbs. Olive Oil plus more for greasing 4 medium zucchini or yellow squash or combination, sliced lengthwise 1/8" thick 3 garlic cloves, sliced Kosher salt and pepper 1 cup panko or other bread crumbs 1 cup shredded gruyere or comte cheese (3oz.)
1. Preheat the oven to 450º.

Grease
a 2 qt baking dish, Add the squash, 2 Tbs. oil and garlic and and toss.
Arrange the squash in the dish and bake for 20 minutes until tender.
Sprinkle with the panko and cheese and bake an additional 10 minutes
longer, until crisp and golden on top.
